Tacos al Rubicon
Ingredients & Supplies
– 1.5 lbs. Flank steak
– .5 c. lime juice
– 3 tbsp. olive oil
– 1 tbsp. garlic powder
– Salt & pepper to taste
– Heavy duty foil
– Bit of 12 gauge wire
– 6” corn tortillas
Mix lime juice, oil, garlic powder, salt & pepper. Marinate steak in mixture for 4 hrs. at room temp. Before leaving for your journey, wrap the steak with foil making a tight, well sealed pocket. Securely strap the foil pocket onto a flat surface of your engine with 12 gauge wire away from any mov ing parts. Cooking time will vary with your engine type and depending on city or highway travel. It should take about 30-40 minutes to cook on
your engine when running hot. When completed, coarsely chop the steak and toss into a hot corn tortilla. No plates necessary, no dishes or stove to clean. Enjoy!
